Ingredients:
250 gram – small prawns
100 gm pumpkin
2 large potatoes
2-3 small brinjals
1 large raw bananna
100 gm yam
½ cup beans
2 tomatoes
You can add or replace Other vegetables as per your choice.
1 onion chopped
1 tsp Haldi
1 tsp chilli powder
1” long ginger
8-10 garlic cloves
1 tsp cumin seeds
1 tsp coriander seeds
Oil
Salt as per the taste
1tsp Garam masala
Chopped coriander leaves
Method:
Clean the prawns properly , add salt and turmeric powder to it.Heat oil in a pan.Fry the prawns & Keep it aside.
Make a paste of coriander -cumin seeds, ginger & garlic & keep aside.
cut the vegetables in to small small cubes. Heat 1-2tsp Oil In a Pan. Fry the vegetables for 1-2 min in high flame.
Heat oil in a pan. Add chopped onions & fry till it turns to golden brown in colour.Add the masala paste. Add chopped tomatoes , chili powder & haldi.Stir continuously for 2-3 min till oil separates from masala.
Then add all the washed vegetables & salt mix them thoroughly. Pour 1 cup of water to it. Put the pan in a low flame for about 5 minutes till the vegetables are properly cooked.
Add the fried prawns let it cook on low flame again for another 2-3 minutes. Add garam masala & Mix well. Garnish with chopped coriander leaves.Your chingudi mahura is ready. Serve with hot rice. Or roti.
