Ingredients:
2 cup Cooked rice
1 Big Lemon
2-3 bigger size Onions Chopped
Curry leaves
Cumin/ Mustard seeds- 1tsp each
2 Green chillies chopped
Oil- 3-4 tsp
1 handfull of Roasted peanuts
Channa daal- 1tsp
Salt as per the taste
Hing a pinch
Haldi-1 /2 tsp
Chilly powder as per your requirement
½ cup grated coconut
1-2 tsp chopped coriander leaves
Method:
Heat Oil in a non stick kadhai. Add hing & mustard- cumin seeds, when it starts crackling add channa dal, curry leaves, green chillies & chopped onions. Saute till the onions turns to golden brown in colour. Then add roasted peanuts. Stir for 15 second. Add haldi & chilly powder.Then add the boiled rice & Add lemon juice to the rice.stir continiously for 1-2 min. Garnish with grated coconut & chopped coriander leaves. Serve hot.
