Ingredients
Palak (spinach)- 1 bunch
2 potatoe cut in cubes
2 tomatoes chopped
5 garlic cloves crushed
1" ginger piece chopped
2 onions, chopped
2 green chilies, chopped
½ tsp turmeric
4 tbsp ghee / butter/ oil
1 tsp cumin seeds
½ tsp garam masala
1 tsp coriander and cumin powder
1 tbsp fresh cream
Salt to taste
Directions
Cut the potatoes into big pieces. Heat ghee/ oil and fry potatoes till light brown. Keep aside
Put the washed spinach in a pan, add very little water and a pinch of salt. Cover and boil over a high flame for 2 minutes. Cool quickly, or hold under running water in a colander. Put in a mixie, add green chilli and run for a minute. Keep slightly coarse, do not make very smooth. Keep aside( You can add fresh finely chopped palak also without making a paste in allu palak gravy)
Heat ghee in a pan. Add the cumin seeds. Add onions. Sauté for 1-2 min. Add the chopped ginger, garlic, onions and fry till very tender. Add the tomato and further fry for two minutes. Add all the dry masalas and fry till ghee separates. Add spinach (chopped or grinded as per your requirement) and potatoes. stir well. Boil for 2-3 minutes. Don’t cover the pan. Season with fresh cream . Serve hot with hot roti/paratha/poori/naan or rice.
