Another famous curry from South Indian Cuisine called as Avial Recipe. This dish is very healthy and delicious, as a variety of vegetables is used to make it. I have learned this recipe from my friend Jeena ..She is from kerla ..One day I went to her room & she gave me avial to taste..& it was wooo..superb & mouthwatering…that time only I thougt of making it bcz coconut & also all vegetables were available in my kitchen. I made it & wow…my husband also liked it….
One of the best recipe I have learned from my friend and I am happy to share with all of you.
Ingredients:
1/2 cup freshly Grated coconut
3 cups mixed vegetables (potato, brinjals, ash gourd, raw banana, yam, cluster beans, snake gourd, drumsticks, potato, cucumber, pumpkin, green peas, cauliflower and carrots) sliced into 11/2" length pieces.. (U Can add or skip any vegetables but don’t add the leafy vegetables)
½ cup sliced green mango (optional)
2 tblsp sour curds
3 tblsp Coconut oil
curry leaves a handful
1/2 tsp Turmeric powder
Salt to taste
How to make:
Heat oil in a thick bottom vessel, add vegetables and cook it on a low flame for 5 min without adding water.
Add turmeric powder, salt and mix well. Put bananas & brinjals in cooked vegetables & add water and cover the vessel. When vegetables are done add the greatd Coconut , curd , curry leaves and cook for 2 min. Be careful not to overcook the vegetables. Some vegetables may get cooked sooner. So add them accordingly, with the longer to cook first followed by the easily cooked.
Remove from fire.Now pour coconut oil over the boiled vegetables & mix well and garnish it with coriander leaves .
