This vegetarian sandwich can be quickly prepared ahead of time for an outing ..this is a easy sandwich for a lazy morning..with all the sautéd vegetables & brown bread...this sandwich is loaded with flavour , healthy & quite filling. I used to love this sandwich when i was a kid..My mom never allowed us to eat from the cart's, she would make these herself!! Here comes this simple recipe.
Ingredients:
3-4 slices of bread
1 small carrot grated
2 baby radishes grated
1 small capsicum sliced
1 cup grated cabbage
½ cup sliced mushrooms
Salt as per the taste
Red chilli flakes 1tsp
Black pepper powder 1tsp
Mozzarella cheese- 2tblsp or as per your requirement
1 tsp soya sauce & tomato sauce each
2 tsp olive oil
2 tblsp butter
Method:
Heat a pan. Drizzle some oil. put the vegetables & sauté them till they turns soft & crispy. Add salt , soya & tomato sauce & pepper powder. Mix well & set aside.
Place one slice of bread on a pan. Sprinkle mozzarella cheese (You can even place a cheese slice on one of the layers of the bread).
Arrange the sauted vegetables on top. Sprinkle some chilli flakes. Then place the second slice of bread .
You can grill the sandwich or you can make it in a pan/ tawa.
Heat a pan. Melt 1 tsp butter. Place the sandwich on the heated pan .
let the cheese melt & cook till both sides of the bread turn crispy.
Cut it into half in Triangle shaped Toast. Your bread sandwich is now ready to serve. Serve hot with tomato ketchup.
