Alloo Dum (Odisha style)








Ingredients:

Medium size potatoes 4-5 nos boiled & peeled (U can make with baby potatoes, I didn't hav in my kitchen, so i made in normal potatoes only)
Onion-2 nos chopped
Ginger garlic crushed-2-3 tsp
Tomatoes- 2nos. Chopped
Chilly pwd.
Cumin pwd / coriander pwd- 1 tsp each
Garam masala power
Whole garam masala (1 cinnamon stick, 4 green cardamoms, 2 bay leaves, 4 cloves)
Turmeric powder- 1 tsp
Cumin seeds-1 tsp
Salt
Mustard Oil- 2tblsp ( u can take any veg oil)


Method:

Take a kadai/ pan. Heat 1tblsp mustard oil. Fry the potatoes until golden brown. keep aside.
Again  add oil in the same pan, add cumin seeds & whole garam masala. When they starts crackle , add onion. stir it till the onions turn into golden brown colour.
Add  crushed ginger garlic paste & add turmeric, salt, chilly powder, cumin & coriander powder. Add tomatoes. Mix well &  stir the masala till the raw smell goes away & oils begins to appear from masala .
Add potatoes. Mix well with the masala. Add ½ cup of water to it. let it boil for some time. When the gravy becomes thick switchoff the flame.
Add garam masala & coriander leaves. Serve with Puri/Roti aur parathas. U can serve it with dahivada too....
