Dahi Vada alludum (Odisha style):ଦହି ବରା


 




Ingredients:
For  Vada:
1 Cup Urad daal
1/2 tsp Baking Soda
Salt to taste
Oil to fry
For Dahi :
500 gm thick yogurt
Curry leaves
Mustard seeds-1 tsp
Hing- 1-pinch
1/2 tsp grated Ginger
1-2 green chilies chopped
chopped coriander leaves
½ tsp sugar
Salt to taste
2 tsp Roasted cumin powder
Red chili powder to taste
Preparation:
For  Vada :
soak the daal overnight. Grind it into smooth paste. Add soda & salt to taste.



Heat oil in a kadai. Apply some water in your palms & fingers. take a small amout of batter & flatten with help of your fingers with a hole in a middle. take the vada from your hand & drop in the hot oil. 




fry till golden brown.


Take the hot vadas and put in cold water for 3-5 minutes.




Now Take the vadas out of water and squeeze the water and keep aside.



For Dahi :
Blend the curd  and little water. Add chopped ginger, green chillis,salt, red chili powder sugar & cumin powder. In a deep dish arrange vada and pour dahi over them.



In a kadai add 1-2 tsp oil. Add hing, cumin seeds & add curry leaves.pour it on dahi vada & mix slowly. Keep in refrigerator for an hour to get chilled.



Garnish with coriander & boondis or sev. Serve the dahi vadas chilled with alloo dum ( ucan find the alloo dum recipe from here (alloo-dum-odisha-style.html)& Guguni (yellow peas curry).

Dear pranati
I am a great Dahi Vada eater but I love the Odisa dahi Vada the most , extra khata and a good sprinkle of very hot chili flakes and more salt...I make and eat almost every other day..Reminds me of Narayana GuDia in front of the school gate ha ha
