Mushroom Broccoli Quiche ( My 1st attempt)








Now this has turned a fav. Recipe of mine for breakfast –dinner-lunch (U can have it any time). This is one of the recipes that can be made in thousand ways. 
Last summer we went to Acadia national park in US & there for lunch we went to one restaurant called Jordan Pond House. There we had broccoli quiche for the first time. As that day was Friday & we don’t eat non veg on that day so we ordered brown rice, broccoli quiche & steamed veggies. No doubt it was very tasty & flavorful. we just enjoyed it.  There I kept on my mind to make the recipe when I will reach home. But somehow I missed it may be due to my small baby gal behind whom I have to run day & nite..:P 
So few days before I  was browsing my google & found this recipe. Immediately the ring bell on my mind & I thought today is the time to give the surprise to hubby by making this quiche. I run to kitchen & open the fridge. I found broccoli & mushroom. So thought to try with these two ingredients.
After so many Google search finally find the recipe & tried it..but one important thing I didn’t hav pie pan. So I had to bake in my square pyrex bowl. 
But this one turned out wonderfully. My husband also  liked it very much. It keeps well in the fridge & reheats well. 




so friends here is the recipe.


Ingredients
Ingredients for pastry 
1 cup  maida/ all purpose flour 
100gm unsalted butter  (grated)
1/4 tsp baking powder
1 egg
pinch of salt
For the filling:
1 ½  cup chopped mushrooms 
1 cup broccoli florets
1 large onion, chopped
1/2 cup milk
3/4 cup shredded cheddar cheese
2 eggs
1 tsp ground black pepper
Salt to taste
1 tbsp olive oil
Italian herbs 

To Make Quiche:

For the pastry:

In a bowl mix flour, salt and baking powder together.  Add the grated butter & mix it well with fingertips until the mixture resembles coarse  meal. Add the egg and bring the dough together. Add ice water in a slow ly if needed at this stage. Form dough in to a single ball. 

Transfer the dough to a floured surface. Roll out the dough on a lightly floured surface about 2" large all around than your pie pan. Its fine even if its not an even circle or whatever. Just make sure the thickness is more or less even all around. (I didn’t have the pie pan so I have to make the quiche in a square pyrex bowl)
Next step is to gently transfer this rolled out dough to a greased pie dish.  Now put it in the refrigerator.  In the mean while we will prepare the filling.
Pre-heat the oven to 350F / 180C.

To prepare the filling:

Heat the oil in a pan and fry the onions until golden brown. Add the mushrooms nd broccoli florets and sautéon medium-high flame until soft & light golden brown. Adjust ground pepper and salt and mix well. Now switch off the flame & let it cool.
Now take small bowl. Break 2 and beat them. Add  milk to the eggs & again mix well. 

Now take out the prepared crust from the fridge. Lay the brocolli mushroom mixture evenly on it. 
And top off with the milk-egg mixture until it reaches almost up to the top of the crust. top off with  shredded cheddar cheese & some Italian herbs.

Bake until the top turns golden brown and patchy in parts and the crust turns golden - about 30 to mins.

Spicy Egg Fry









Ingredients:

Boiled Eggs  4 – remove the skin & cut in to 2 pieces
Green chilli- 2-3 chopped
Medium size Onion 3-4
Ginger- Garlic Paste 1 tsp
Cumin- coriander powder- 1tsp
Chilli Powder  1tsp
Turmeric powder ¼ tsp
Salt as per taste
Garam Masala: ½ tsp
Curry Leaves a hanful
coriander leaves chopped- 1tblsp
Oil- 1tblsp

Method :

Cut the hard boiled eggs into two.
Heat  oil in a pan. Add chopped onions, curry leaves & chopped green chillies. Sauté till they become soft. Add  ginger  garlic paste & sauté for 1-2 min.
 Add turmeric powder, chilli powder , cumin- coriander powder & garam masala. Mix well. Stir the masala till raw smell disappears from masala. Then add the cut boiled egg pieces and gently mix in everything together. Garnish with chopped coriander leaves. Serve hot with rice/ roti/ chapatti or any type of pullav.

Egg masala





Ingredients:

Boiled egg- 3 ( I have used 3 eggs, u can take how much u want )
Onion 2 nos- chopped
Ginger / garlic paste - 1 tbsp
1 Medium size Tomato – chopped
Red Chilly powder - 1 tsp
Garam masala powder - 1 tsp
Whole garam masala ( cinnamon, 2 nos. cardamom, bayleaves)
Mustard Oil- 2tblsp
Salt for taste
Coriander leaves chopped


Method:






Heat 1 tblsp Oil in a pan. Put the boiled eggs to hot oil & fry for 1-2 min till it turns to brownish colour. Keep the eggs aside.
 Heat oil in the same Pan, Add whole garam masalas, Then add onions and fry till golden brown. Add ginger/garlic paste and saute for 2 min. Add chilly powder & tomatoe and saute for 2-3 min till oil separates from masala. Add salt , garam masala powder and stir it for another 1-2 min.

In the mean while cut the egg in to 2 pieces. Now add the eggs  and Mix well. Stir for another 1-2 min. till the eggs are well coated it masala. Turn off the flame. Garnish with coriander leaves . Serve with roti, chappati or rice .

Poached Eggs



Ingredients you need:
4 eggs
2tblsp Black pepper
2tsp Salt or as per the taste
Water for boiling
3tblp vinegar
Utensils  required
Frying pan
4 metal rings
4 small bowls
Method:
Break eggs into the 4 small bowls (i.e break only one egg in one bowl  & repeat with  the remaining 3 eggs in that 3 bowls)
Heat the water. Half fill pan with water.Put on medium heat. Add the vinegar & salt. Place the 4 metal rings in to the boiling water. Sim the flame.
Now poach the eggs. Pour eggs in to the metal rings ( 1 egg in 1 metal rings ) .Cook for 3-4 min.Remove the rings. Use cloth to protect the hands when removing rings.  Remove the pan from the heat & Serve immediately on toast .
Sprinkle some black pepper before serving.
or
Break eggs into the 4 small bowls .
Heat  a large pan. Place the 4 metal rings in to the pan. Add a little olive oil.when the oil is hot Sim the flame.
Now Pour eggs in to the metal rings ( 1 egg in 1 metal rings ) .fry it for 1 min quickly.Remove the rings. Remove the pan from the heat & Serve immediately ..Sprinkle some black pepper & salt  before serving.

Egg Bhurji..:)



Ingredients:

3 eggs,
1 large onion roughly chopped
6-7 tomatoes chopped
2 green chillies chopped
1 tsp cumin seeds
Olive oil 1tblsp
Black pepper
Red chilly powder
Salt
Garam masala ½ tsp
Chopped cilantro- 1tsp

Preparation:
Crack the eggs into a glass mixing bowl and beat them until they turn a pale yellow color.
Heat a heavy-bottomed nonstick sauté pan over medium-low heat. Heat oil. Add cumin seeds let it crackle.
Add chopped onions & green chillies.Let them fry for 2 minutes till they turns soft & transparent. Now add black pepper, chilly powder, salt & garam masala.stir for 5 sec.mix well.
add the egg mixture . let it spread properly.don’t do any thing for 10 seconds & now start moving the eggs. Cooking  has to be continued until the eggmixture is no longer mushy or until the scrambled egg pieces are separated & fluffy. Lower the heat and sauté till dry.
Remove from heat &  sprinkle some chopped cilantro. Serve hot with roti/parathas , pullavs & bread.

A scrambled egg preparation in American style


This is my husband’s fav..simple  & easy to make. It is a great recipe when you have no vegetables in your kitchen or you are just too tired to cook and need something quick .It is a simple easy recipe which needs only a few ingredients from your kitchen.


Ingredients
The omelet in this recipe is the so-called "American-Style" or "folded" omelet. It's definitely the easiest technique for making an omelet.
•3 eggs,
•1onion,
•salt
•1 tblsp butter
Preparation:
Crack the eggs into a glass mixing bowl and beat them until they turn a pale yellow color.
Cut onion into small pieces,In a bowl, mix eggs, onion & salt.
 Heat a heavy-bottomed nonstick sauté pan over medium-low heat. Add the butter and let it melt.add the egg mixture . let it spread properly.don’t do any thing for 10 seconds & now start moving the eggs. Cooking  has to be continued until the eggmixture is no longer mushy or until the scrambled egg pieces are separated & fluffy. Lower the heat and sauté till dry.
Remove from heat &  sprinkle some  white pepper. Serve hot with parathas & bread.
I just love to have it as a sandwich filling....

Tips:
You can add cheery tomatoes, red chilly flakes, fresh sweet basil leaves chopped, or cilantro to the omlet.

Yummy Pumpkin muffins


If the first taste of your day is one of these pumpkin muffins, how can you have a bad day at all?
This recipe is super easy. Recipe follows after the jump…




Ingredients:
  • ½cups all-purpose flour
  • 1/4 cup sugar
  • ½  teaspoon ground ginger
  • 1 1/2 tsp baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 tsp of nutmeg, cloves powder
  • 1/2 tsp baking soda
  • 1/2 tsp of salt
  • 2 eggs beaten egg
  • 1 cup cooked mashed pumpkin yellow
  • 1/2 cup skim milk
  • 2 tablespoons refined oil/ melted butter
  • ¼  cup orange juice
  • 1/2 tsp grated orange skin
Method:
Whisk together flour and baking powder in a bowl.
Whisk together pumpkin, oil, eggs, nutmeg powder, cloves powder, salt, sugar, baking soda, milk ,cinnamon, grated orange skin & orange juice. Add the above whisked flour, stir with wooden spoon until smooth.
Preheat oven to 350 degrees F for baking.
Fill well-greased or paper-lined muffin cups two-thirds full .
Bake 400 degrees F for 15-20 minutes or until muffins test done (toothpick inserted near center comes out clean). Cool for 10 minutes before removing muffins from pan.

Masala Egg Curry:


Ingredients
4 boiled eggs shelled
1 large onion sliced
2 tsp of ginger garlic paste
2 green chillies slit
1 tsp of cumin seeds
1 bay leaf
3 illaichi
½  tsp of turmeric,
1 tsp of Chili powder
½  tsp sugar
1 tbsp of tomato ketchup
2 tbsp of curd
1 tsp of cumin-coriander powder
½ tsp of garam masala
2 tbsp of mustard oil
Salt to taste
Coriander leaves chopped
Method:
Heat 2tsp mustard oil in a kadai. Fry the boiled eggs & Take out when they turns to light brownish in colour.Keep aside. Cut them in to pieces by using a knife.
Then add 1tblsp oil to the same kadai. add bayleaves & whole illaichi.
Splutter cumin seeds. Once the cumin seeds splutter, add the sliced onions & sauté till they turns to golden brownish colour & then add ginger &  garlic paste , sugar ,slit chillies, turmeric powder, chilly powder , Dhania-jeera powder and the tomato ketchup and fry for a min.Add salt. saute for 2 min Till raw smell disappears from masala & oil separates..saute for 1-2 min. Then add  the thick yoghurt. Saute for some time. Then add a little water and let the curry boil .Once oil starts to separate, put in the fried eggs .when the gravy will become thick then  add the  garam masala. Switch off the flame. Garnish with coriander leaves and serve hot with roti/ paratha/nana/any type of rice/ pollaus.

Egg noodles





Ingredients:
Noodles 500 gms
1 Onion chopped lengthwise
Spring onions- ½ cup cut length wise
ginger cloves-5-6  minced
ajinomoto -1 pinch
salt
Egg 2
Blk Pepper powder 1 tsp
Vinegar 1/2 tsp
Soya sauce ½ tsp
Carrot cut lengtwise 1
½ cup Cabbage thinly cut lengthwise
1 Capsicum cut thinly lenghtwise
Oil-3-4 tsp 


Method:

Take a kadai and pour water enough to cook the noodles . Bring it to boil. When it starts boiling add the noodles to it and then cook for 3-5 minutes. When the noodles are done remove from flame and drain all the water.
Take a pan and heat oil . add onions and saute till golden brown. Now add minced garlic cloves, spring onions, Carrot, cabage, capsicum and fry for 2-3 min.add  pepper powder, ajino moto salt.
Add the egg and stir it till all the ingredients blend well with it. Add the boiled noodles and fry for another 3-4 minute. Add soya sauce, vinegar.Serve hot.
