Ingredients:
Poi saaga- 1 bunch
pumpkin- 200 gm
large potato- 2-3 cut in cubes
brinjal- 200gm cut in cubes
Parwal (potala)- 3-4 cut in cubes
Onion- 1 chopped
Garlic – 5-6cloves
Ginger-1/2inch
Cumin seeds- 1/2tsp
1 bay leaf
Turmeric powder- 1/2tsp
Salt
Chili powder
Cumin & coriander powder- 1tsp each
Garam masala
Oil
Grind onion, garlic, ginger and cumin seeds to a fine paste. Cut poi leaves in tiny slices. Cut stems into two inch pieces and if stems are thick, cut it again lengthwise into two pieces.
Put 2-3 tsp oil in a pan and fry all vegetables & poi stems till golden brown and keep aside. Add oil in a pan. Splutter cumin seeds. Add 1 bay leaf.Add chopped onions & sauté till they becomes soft & golden brown in colour. Add masala paste and fry .Add haldi, cumin/ coriander pwd and salt with masala and fry .when the masala will be ready Add all the vegetables & sauté for 1-2 min.Then add 1 cup of water to it. When the curry boils , add poi leaves and cover the pan for 5-10minutes. Add garam masala & switch off the flame.
Poi tarkari is ready to serve with rice, roti.
