Allu gobi masala


Cauliflower – 1 medium,  washed & cut the florets
Large Potatoes – 2 , cut in big  pieces
Cumin Seeds – 1/2 tsp
Turmeric Powder – 1/2 tsp
Onion – 1 medium, finely chopped
Ginger garlic paste 2 tblsp
Tomatoes – 2 large, chopped
Coriander Powder – 2 tsp
Cumin Powder – 1 tsp
Garam Masala – 1 tsp
Red Chili Powder – to taste
Salt – to taste
Mustard Oil – 2 Tbsp
Chopped coriander leaves
Method:
 Heat 1 tbslp oil in a pan. Place washed Cauliflower florets & potatoes and  fry for approx 3-5 minutes (it should be  half cooked). Lightly Salt the Cauliflower & potatoes .
 Heat Oil in a  pan. Add Cumin Seeds and allow them to sizzle.Add Onions & sautee for 1-2 minutes.  
Add turmeric Powder and Ginger - Garlic paste, sauté for 1-2 min add tomatoes , salt , redchilly powder & saute until Oil starts to separate from the masala.
Then add  the half cooked Potatoes  & cauliflowers. Add Coriander Powder, Cumin Powder, ½ of garam masala powder  & mix well to coat all potatoes & cauliflowers ,add ½ cup of water.
cover and let it cook for 5-10 minutes until all veggies are tender but not mushy and falling apart.
Garnish with chopped coriander Leaves and serve with roti, Paratha, naan , pollau or Rice
