Gupchup/ panipuri/ golgappa







For  masala:

3 large size potatoes (boiled)
½  cup yellow peas- soaked & boiled 
Chopped onion- ¼ cup
2-3 green chillies- chopped
Coriander leaves- chopped ¼ cup
Roasted Cumin seeds powder- 1tblsp
Red chiili powder- 1tsp
Black salt- ½ tsp
Salt as per the taste

For tangy water/ khataa pani

Mint/ Pudina leaves a hand ful
Green chiili- 1 or 2
Ginger- 1” long
Tamarind juice- ½ cup
Panipuri masala- 1tsp (available in mkt)
Black salt- 1tsp
Salt as to taste
Water- 1 ½  cup
1 tblsp boondi for garnishing 

To make puri:

1 cups of fine Rawa
½  cup of whole wheat/ maida
Water
1tsp Oil

Method:

1st we will make dough. Take a bowl. Mix rawa & maida together & make a dough with adding water. Add 1tsp oil & again knead the dough. Then cover it with a damp muslin cloth for 15-20 min.
Again knead the dough. Make big balls from the dough. & roll it thin like a big chapatti. Take any bottle cap (ie cap of a mineral water bottle) & Then cut round shape by pressing it & then roll the round shape puris. It should be about 1.5 inches . Heat oil in a kadai. when oil is medium hot (it should not be piping hot) put the rolled puris to hot oil & fry them by pressing the back side of the ladle ( press in center nd along the edges). Flame should be low to avoid softening & also it will help the puris to puff up & become more crispy...fry them till they turns to light golden brown...place them on a absorbent paper to drain excess oil from puris..
Cool nd store in a air tight container & use when u want...



Peel the skin of boiled potatoes.  Roughly mash the potatoes. Add yellow peas & all the ingredients given above to make the masala for panipuri. Keep aside.


Grind mint leaves, green chiili & ginger.  Take a large bowl. U can add the mint paste or if u don’t like u can strain to remove the rough bits. Add tamarind juice & all the dry ingredients according to your taste. Keep it in the refrigerator. u can garnish the khatta pani with fried boondis.


Make a small hole on centre of the puri by tapping slowly & put some potato stuffing in to it. Deep the stuffed puri in the chilled mint tangy water & take out by filling the water in it & stuff the whole panipuri in to your mouth..
