Tutti Frutti Muffins








Ingredients:


1 ½ cup All purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1tsp cinnamon powder
Pinch of nutmeg powder
1 stick of unsalted butter (room tempr.)
1 cup white sugar
2 large eggs
1 ½  tsp pineapple essence
½ cup milk
1 tsp orange zest 
2 tblsp finely chopped cherries
1/2 cup tutti frutti
2 tblsp broken cashews

Method:

Preheat the oven to 350 degrees F. Place the rack in the middle of the oven. Grease a muffin tin or line with paper liners and set aside.
Take bowl. Sieve flour, baking soda and baking powder, Baking soda and keep aside.. 
Whisk butter with sugar till light & fluffy. Add in beaten eggs and essence and give a quick whisk. 
 Fold in flour and baking powder, soda & orange zest, cinnamon powder, nutmeg powder. Add Milk & mix well. Do not over beat, just mix till well combined in low speed.

Add chopped cherries, tutti frutti,  broken cashews & reserve some for sprinkling on top. Do not beat it but just fold until combined and pour the batter among the muffin cups (about ½ to 2/3 full). Sprinkle the remaining cherries, tutti-frutti & cashews on the top.
 Bake until the muffins are light golden brown and a toothpick or thin knife inserted into the center of a muffin comes out clean & muffins becomes golden & springy to touch, bake for 20-25 minutes, Immediately remove muffins to a wire rack and cool for at least 5 minutes. Your muffins are now ready to eat..Serve immediately or U can Store in an airtight container at room temperature.

Tuttti Frutti Cake


 

Yesterday Sep 04-2013 my little one completed 6 months.....OMG time is flying too fast...Seems like yesterday when she came to our world. Luv U my baby Smiley. To celebrate this I decided to make the TUTTI FRUTTI cake...Made this for 1st time & it came out really tasty.Smiley..This cake is my favorite  and I am super excited about bringing this recipe in my blog!! So here we go :)







Ingredients:

 Bake for 30-35 mins until the cake  turns to  light golden brown and a toothpick or thin knife inserted into the center of a cake comes out clean & cake becomes golden & springy to touch. let it cool for 5-10 min.
Remove cake from pan , Cut as per your desired shapes and enjoy the slices.

Suji Kakara Pitha (Odisha Special)









Ingredients:

Suji (rawa ) -2 cups 
Water 4 cups
Sugar -1 ½  cup ( u can adjust sugar according to your taste)
cardamom- 5 pcs ( make powder)
Shredded fresh coconut- half a coconut
Freshly Grounded Black pepper- 1tsp
Refined Oil- for frying
Salt - a pinch


Method:

  • In a bowl, mix properly the shredded coconut, half of Sugar, black pepper pwd.  and cardamom powder and mix well .Keep them aside.
  • Boil about  4 cups of water (double the amount of rawa))& add sugar, a pinch of salt to it. When  sugar dissolves, Add Rawa to it. Mix  them  fast to avoid any  lumps. Stir it Keep it on the flame for 2 min. Remove from flame and keep aside.
  • Let the dough cools down to room temperature. Then apply ltl oil in your palms. Kneed the dough till it becomes soft.
  • Make small small balls from the dough & flatten them using your palms , 
  • Make  a deep depression in between ( make it like a cup) using your fingers  & put  the coconut stuffing. 
  • Then Close it form all sides .Make the above balls into flat shape  with the help of  your palms.
  • Heat oil in a frying pan . When hot, drop these stuffed balls one by one & fry in a lower flame till they  turns golden brown from each side.
  •  Kakara pitha is ready and serve it hot or cool anyway u like it.

Pineapple Upside-down Cake




As I m a food blogger I love to bake & cook for all the occasions when they come..This time I really wanted to bake something new for my hubby’s bday. So thought why not Pineapple upside down loaf cake..always i was wondering to make this cake...never had this cake outside so was bit confused to make on my hubby’s bday..So 1st  tried with a LOAF cake adapted from Martha Stewart’s recipes & believe me the aroma of pineapples & freshly made caramel while baking is really awesome...yaahh.. my hubby also loved it..So after an Online search I came across this recipe...







INGREDIENTS:

Topping

3tblsp butter
½  cup brown sugar
1 small can Pineapple slices with juice
Batter:
1 ½ cup All purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 stick of unsalted butter (room tempr.)
Maraschino cherries (optional)
1 cup white sugar
2 large eggs
1 tsp vanilla extract
1 cup pineapple juice/ butter milk ( u can add whatever u want..I have added the pineapple juice.)

INSTRUCTIONS:

Preheat oven to 350°F. Prepare a 9*5  loaf pan with butter & flour/ baking spray.
Take a bowl. Melt butter in the oven. Add  brown sugar over melted butter. Put in the microwave for another 30 sec. Stir until all melted well. 


Spread the brown sugar & butter mix to the coated pan. Arrange pineapple slices over brown sugar. Place cherry in centre of each pineapple slice. Reserve remaining pineapple slices and cherries for another use. 

Take a large bowl. Place softened 1 stick of butter and the white sugar. Using an electric beater beat together until fluffy. Add eggs one at a time beating well after each addition. Add the vanilla and mix in.
Add together all the rest of the dry ingredients and whisk. Add the dry dry ingredients to the prepared batter, mix well and add the pineapple juice. Mix just until combined. Using a spatula fold in the pineapple chunks in to batter.


When mixed, using a spatula to push the batter into the loaf pan over the pineapple. Place in a 350° oven for 35- 40 minutes or until a toothpick comes out dry.

Let the cake cool in the pan. Remove from pan & transfer the cake to the wire rack to cool completely.

Marble cake recipe (chocolate & vanilla flavor)♥♥

This time i made marble cake & nan khatai for my valentine..:)♥

I baked this cake for the 1st time & it was superb..
Smiley It is soo simple recipe, tasty & the aroma is soo good...& more over it takes less time to prepare.... Who doesn’t love cakes...from kids to elder everyone is cake lover..So today I m going to share a yummy delicious marble cake.. A very simple & nice to eat.. which is very easy to do & tasty too...A homemade cake can easily compete with any other cake available in market..right???




Ingredients:

  • 2  cups all purpose flour
  • 2 tblsp cocoa powder
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 4 eggs
  • 1 stick unsalted butter melted
  • 1 cup sugar
  • 1 tsp orange zest
  • 1tsp vanilla extract
  • ½ cup orange juice
  • Mix of Coffee powder + cinnamon powder + sugar ( 3 tblsp)
  • Chopped roasted walnuts (optional)


Method:
  • Preheat the oven to 180 degree.
  • In a big bowl take the melted butter, sugar, eggs. Now using electric beater beat them until they turns to a smooth & creamy. 
  • Now add orange zest, orange juice & vanilla extract. Again beat them.
  • In a separate bowl add flour, baking powder, salt & sieve. Mix in the wet and dry ingredients.
  • Divide the mixture by half into two separate bowls. Gently fold the cocoa powder into one half of the mixture. Take the baking tray. Grease it. Drop each cake mixture into the prepared tin, alternating between the white & chocolate mixture. Sprinkle the cinnamon sugar mixture on the top. Add the roasted walnuts.
  • Preheat the oven to 180 degree. Bake in the preheated oven for 40 minutes (Baking time may be different for different ovens) or until firm and a knife/ toothpick inserted into the centre comes out clean.
  • Leave in the tin for 5 minutes, then turn out and cool on a wire rack. Your yummy cake is now ready to serve.....
  • As I was preparing it for valentine day so I cut the cake using this cutter & decorated it with some chocolates.Smiley..my cake is now ready. 
  • Also I made my hubby's fav. cholle Bhatore  for dinner & he just loved it....Smiley
