Lauki ka raita/ Lau Raita


Ingredients:
1 cup of grated lauki/ lau
1 cup curd
½ teaspoon Black salt
Salt to taste


oil 2tblsp
3-4 dried red chilies
1teaspoon mustard, cumin seeds
handful of curry leaves
roasted cumin powder 1/2 tsp
1/2 tsp red chilly powder
1/2 tsp black pepper powder
pinch of sugar
1/2 cup onion chopped/ sliced
2 garlic cloves minced



 Method:




Add oil in a kadai.& heat oil. Put the grated Lauki in kadai. Stir  it  for 3-5 minutes till the lauki becomes soft nd dry.Cool it in room tempreture.
Whisk  curd by adding salt , black pepper, black salt, sugar & roasted cumin powder. Then put the cooked lauki into curd . mix well.

Heat 1tblsp of oil in a tadka pan. Add Red chillies, mustard, cumin seeds and curry leaves.
When the seeds start cracking , Add minced garlics & sliced onions.Stir for 1min till onions become translucent. Add the red chilly powder & immediately pour the seasoning to the curd mix.
Mix properly. serve with hot rice/ pullav.

Dahi Brinjal ( baigana)





Ingrerdients:


200gm fresh thick curd
200gm brinjal cut in slices
oil 2tblsp
3-4 dried red chilies
1teaspoon mustard, cumin seeds
handfull curry leaves
salt as per taste
roasted cumin powder 1/2 tsp
1/2 tsp red chilly powder
1/2 tsp black pepper powder
pinch of sungar
2-3 garlic cloves minced


Method:


slice the brinjals into thick pieces . Heat 1 tblsp oil in a pan. Fry the  brinjals .
whisk  curd by adding salt , black pepper, sugar & roasted cumin powder.Then put the fried brinjals into curd . mix well.
Heat 1tblsp of oil in a tadka pan. Add Red chillies, mustard, cumin seeds and curry leaves.
When the seeds start cracking , Add minced garlics.Stir for 10-15 sec. Add the red chilly powder & immediately pour the seasoning to the curd containing brinjals.
Mix properly. serve with hot rice.

Raita with peanut powder

Ingredients 


2 tomatoes cut into small pieces
2 small cucumbers peeled and chopped

1 large onion chopped
3 tbsp dry roasted and skinned peanuts
salt

1/2 tsp red chili powder
1/2 tsp roasted cumin powder
1 1/2 cups cold yogurt whisked until smooth
   Powder the  peanuts in a grinder until it turns to a fine powder. In a large bowl, add cucumbers, onions,tomatoes, salt to taste, red chili powder & cumin powder mix well.

Palak Raita



Ingredients
Palak 1 big bunch
jeera 1 tea spoon
pepper 1 tea spoon
little ghee for sauteing
salt to taste
thick curds made out of skim milk powder

Method
wash the palak leaves and cook them with very little water
retain the cooked water
saute jeera and pepper corns with half a teaspoon of ghee
grind this in a small mixi jar till it is powdered, add palak and the left over water and grind to a smooth paste add the curds and salt . this is a good combination with rise or with roties .

Dahi Kachumber


2 onions
Salt and black pepper to taste
½ tsp roasted cumin powder
½ tsp black salt
1 cup yogurt
2 medium tomatoes chopped
1-2 green chillies chopped
2 tablespoons chopped coriander

Cut the onions into thin slices, sprinkle salt and set aside for 20 minutes. Squeeze out as much liquid as possible. Mix with yogurt and the rest of the ingredients.Serve with rice.

Cabbage Raita


Ingredients

2 cup shredded cabbage parboiled
1 tsp Roasted cumin powder
 1/2 cup grated coconut
 2 cups plain yoghurt
2 Red chillies
 Salt 
 1 tsp. mustard seeds
5-6 curry leaves
1 tsp. oil

 Method:
 
Mix yogurt, salt, cabbage. Place in a serving bowl. Heat oil in a small pan and add mustard seeds, curry leaves. When seeds splutter, add red chillies. Stir for a few seconds. Pour over the raita.add cumin powder. Serve chilled.

Fruit Raita

Ingredients:




2 cups Curd
2 Bananas
1/2 Pineapple
1 Apple
1 cup fried kaju
1/2 cup Pomegranate seeds
Chopped coriander leaves
Sugar to taste
Salt to taste
Black pepper powder to taste

Methood:

·         Stir the curd with hand mixer  properly and mix salt, sugar, and curd is thick add little milk or water. Cut all the fruits in cubes cubes and add to  curd.Garnish the fruit raita with chopped coriander , fried kaju and pomegranate

BOONDI RAITA

Ingredients:



1 Cup Curd
100 gm boondi
1/2tsp Roasted Cumin powder
salt to taste
Red chili powder to taste
½ tsp black pepper
Finely Chopped coriander leaves


Preparation:

·         Stir the curd with hand mixer.
·         Add boondi and mix gently. If it becomes thick add little water and mix it.
·         Now add salt, cumin powder , black pepper and chili powder, mix well.
·         Sprinkle garam masala and garnish with chopped coriander.
·         Keep in refrigerator for an hour
Serve boondi raita chilled.

Cucumber raita





Ingredients
  • 1 cup yogurt
  • 1/2 cup finely chopped seeded peeled cucumber
  • 1/2 cup chopped tomato
  • 1/4 cup minced red onion
  • 1 teaspoon roasted cumin powder
  • ½ tsp black pepper
  • ½ tsp chat masala
  • 1/4 teaspoon salt
Mix  yogurt, cucumber, tomato, onion, cumin, black pepper powder ,chat masala and salt in a small bowl. mix well. Refrigerate it for 15-20 min. Raita is ready to serve.
