100 Yummy Diwali Sweets Recipes - Ebook By Indus Ladies

For the upcoming Diwali on October 26th, 2011, Indusladies is compiling an E-Book called “100 Yummy Diwali SweetRecipes”. We are collecting sweet/dessert recipes from various bloggers to be featured in this E-Book.


This E-book will be made available as a free download to our community's 1.3 Lakh+ members. In addition, they are also be making this E-Book available to our 9000+ Facebook fans and Twitter followers. It's LOTS and LOTS of exposure to those food blogs entering the E-Book!!

Layer Paratha










Ingredients


2 cups wheat flour
1/2 tsp  baking powder
1tblsp sugar
luke warm Milk-1/2 cup
Salt ½ tsp
Refined Oil/ ghee

Method


Mix the flour, salt and sugar well. Now, add 2tblsp ghee to it. Mix well. Then slowly add the luke warm milk and make a dough. Knead well until smooth & make a stiff dough.
Keep it covered under a wet muslin cloth. (This is to avoid the top of the dough drying up)
Divide into 8 equal portions and form into smooth balls.
Dip your dough ball in flour and roll out to a 6″ disc.
Roll out as thinly as you can .Coat one side with oil and then form pleats (Start forming pleats from one side). 





Now twist the roll in to a tight circle.





Flatten bread only on one side to preserve the layers. Now gently press it by a rolling pin to a thick round layer paratha.


 Cook on a very hot tava, brushing both sides with ghee. All the skins to become crunchy and keep it on the tava till both sides have turned golden brown.
Stack, and crush the sideways every few hot paratha so that it will separate the layers.
Goes well with black channa curry & egg curry.

Yummy Pumpkin muffins


If the first taste of your day is one of these pumpkin muffins, how can you have a bad day at all?
This recipe is super easy. Recipe follows after the jump…




Ingredients:
  • ½cups all-purpose flour
  • 1/4 cup sugar
  • ½  teaspoon ground ginger
  • 1 1/2 tsp baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 tsp of nutmeg, cloves powder
  • 1/2 tsp baking soda
  • 1/2 tsp of salt
  • 2 eggs beaten egg
  • 1 cup cooked mashed pumpkin yellow
  • 1/2 cup skim milk
  • 2 tablespoons refined oil/ melted butter
  • ¼  cup orange juice
  • 1/2 tsp grated orange skin
Method:
Whisk together flour and baking powder in a bowl.
Whisk together pumpkin, oil, eggs, nutmeg powder, cloves powder, salt, sugar, baking soda, milk ,cinnamon, grated orange skin & orange juice. Add the above whisked flour, stir with wooden spoon until smooth.
Preheat oven to 350 degrees F for baking.
Fill well-greased or paper-lined muffin cups two-thirds full .
Bake 400 degrees F for 15-20 minutes or until muffins test done (toothpick inserted near center comes out clean). Cool for 10 minutes before removing muffins from pan.



Blue berry Muffins


Ingredients:
  • 1 1/2 cups all purpose flour
  • 3/4 cup white sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1/2 cup melted butter or margarine
  • 1/4 cup milk
  • 1 cup blueberries (fresh or frozen)
Instructions:
  1. Pre heat the oven at 400 degrees F (200 C).
  2. Mix flour, sugar, salt, cinnamon and baking powder. In another bowl, mix vegetable oil, egg , melted butter & milk. Mix together with flour mixture. Add in blueberries.
  3. Grease muffin tins.
  4. SPOON batter into prepared muffin cups.
  5. Bake for 20 to 25 minutes until golden & until toothpick inserted in center comes out clean .

Musroom potato Masala




Musroom-  250gm (cut into pieces)
potatoes 2 nos- peeled, boiled & cut in cubes
Ginger garlic paste- 2tblsp
Cashew nuts paste- 2tblsp
Tomato puree- 2 tblsp
1 large tomato chopped
Haldi- ½ tsp
Cumin seeds- 1tsp
Dalchini stick- 2” long
Illaichi- 2-3 crushed
2 green chilli chopped
3 large onion chopped
Green onion chopped- ½ cup
Coriander- cumin powder- 1tsp each
Red chilly powder- 1tsp (as per your taste)
Dried kasturi methi powder- 1tsp
Garam masala powder- 1tsp
Oil- 3 tblsp
Coriander leaves chopped a handful

Method:
Heat 1-2 tblsp oil in a wok. Add the mushroom pieces & fry for 3-5 min till light brown. keep the mushrooms aside. Again add 1tblsp oil in the same wok & add the boiled potato cubes. stir fry for some time till light brown. Keep them aside.
 Heat oil in a wok again. Add dalchini stick, whole iilaichi to it. Add cumin seeds. Let it splutter.
Add  Chopped onions, green onion, chopped green chilly & sauté till they turns to golden brown colour.
Then add  ginger garlic paste, haldi, cumin- coriander powder, red chilly powder & mix well. Sauté till oil appears in masala.
Then add the musrooms & boiled potatoes. Adjust salt & mix well.
Add cashew nuts paste & mix well. stir for 1-2 min. Then add  ½ cup of water. Let the curry boils for 5 mins till the mushroom becomes soft.
When then gravy becomes thick add crushed dried kasturi methi powder, garam masala powder. Remove from the flame. Garnish with chopped coriander leaves & serve hot with rice/ pullav/ puri/roti.
