Budha chakuli (sweet thick dosa orissa style)



Ingredients:
1 cup urad daal  & 2 cups rice (soaked overnight)
1 ½  cup sugar or jagerry (grated)
1tblsp grated  ginger
1 tsp baking powder
½ cup broken cashew nut s & raisins
1 cup grated paneer (Dahi chenna)
1 cup grated coconut
10 small pieces of thin coconut slices 
3-4 green cardamom crushed
1tsp black pepper powder
2-3 tblsp desi ghee / oil
salt  as per taste
Method:
For the batter:
Soak the rice and black gram in water  for about 5-6 hours. Wash them properly.
 Grind them and make a fine batter. Add water, soda and salt and leave in a warm place for one night for the batter to ferment.
Add  jaggery, crushed cardamom, grated coconut, coconut slices, chopped ginger & cashew nuts to the batter.
For stuffing:
Take a bowl. Put grated coconut, paneer , grated jaggery, black pepper powder & cardamom powder and mix well.
Heat a pan and fry the above mixture for 2-3 min. Your stuffing is ready.
To make Chakuli:
Take a flat pan and put 2tblsp desi ghee. Pour 1 laddle spoon of the batter & Form a thin layer Then put a layer of the stuffing over it. Again   Pour another layer of the batter over the stuffing . Cook 1 side for 5 minutes in a medium heat and then turn and add 1/2 tea spoon more ghee/oil. Let the other side also cook for another 5-10 minutes till both sides of the pitha turns to golden brownish colour. Your budha  chakuli is ready , cut in to pieces & serve.
