Ridge gourd curry (Janhi tarkari)



Ingredients:

500g ridge gourd
1 onion, finely chopped
2 tomato, finely chopped
1 tsp ginger garlic paste
1/2 tsp chilli powder
1 tsp coriander powder
1/4 tsp turmeric powder
1/2 tsp mustard seeds
½ cup coconut milk
Curry leaves
1/2 tbsp oil
salt to taste
coriander leaves for garnishing

 Preparation:

Peel and cut the ridge gourd into small cubes. Heat a pan. Add 1-2 tsp oil. Add ridge gourds in hot oil & sauté for 2-3 min. switch off the flame & keep aside.

Heat a another pan with oil and add mustard seeds. When they starts crackling add chopped onions & curry leaves and saute till they turn into transparent. Add chopped tomatoes and saute till they become juicy. Add ginger garlic paste and saute till the raw smell disappears. Then add chilli powder, coriander powder, turmeric powder , coconut milk powder and salt. Saute for a second and now add the ridge gourd pieces. Combine well and cover with a lid and cook on low flame till the ridge gourds becomes tender. Finally adjust salt and garnish with coriander leaves. Your ridge gourd curry is ready to serve.
Serve hot with Roti, rice
