Potala Rasa (Parwal currymade of from coconut milk)

200 gms parwal
2 potatoes
Onion 1 chopped
Ginger garlic paste- 1-2 tsp
1 tomato chopped
coconut milk of 1 cup
1 tsp coriander / cumin powder each
1 tsp garam masala powder
1 whole illaichi
bay leaves-2
chopped coriander leaves
3-4 tsp oil


Peel the skin of parwal & cut into thre circular pieces.
Cut  potatos into almost 8 pieces. Take a kadai. Add 2-3 tsp oil. Fry the parwal and potato with  till it becomes golden brown.Keep aside.
 Heat kadai again and add 1-2 tsp oil.add sugar & when it turns to browny syrup, add bay leaves. add crushed illaichi powder in oil. Fry the onions. When the onion turns golden brown in colour, add ginger garlic paste,turmeric powder ,cumin seeds / coriander powder, and salt; and saute well.
After that add fried parwal and potato and saute for atleast 2-5 minutes.
Then add coconut milk to it and boil the curry.
 After boiling, add garam masala powder & chopped coriander leaves and stir well.

Potala rasa is ready & serve hot with rice/ roti.
