Boiled egg- 3 ( I have used 3 eggs, u can take how much u want )
Onion 2 nos- chopped
Ginger / garlic paste - 1 tbsp
1 Medium size Tomato – chopped
Red Chilly powder - 1 tsp
Garam masala powder - 1 tsp
Whole garam masala ( cinnamon, 2 nos. cardamom, bayleaves)
Mustard Oil- 2tblsp
Salt for taste
Coriander leaves chopped
Heat 1 tblsp Oil in a pan. Put the boiled eggs to hot oil & fry for 1-2 min till it turns to brownish colour. Keep the eggs aside.
Heat oil in the same Pan, Add whole garam masalas, Then add onions and fry till golden brown. Add ginger/garlic paste and saute for 2 min. Add chilly powder & tomatoe and saute for 2-3 min till oil separates from masala. Add salt , garam masala powder and stir it for another 1-2 min.
In the mean while cut the egg in to 2 pieces. Now add the eggs and Mix well. Stir for another 1-2 min. till the eggs are well coated it masala. Turn off the flame. Garnish with coriander leaves . Serve with roti, chappati or rice .
