Chandrakanti


Chandrakanti is a traditional odiya dish, deep-fried  made from Moong dal and coconut. It is prepared in every household during festive occasions. Lovely sweet, very interesting recipe....









Ingredients
1 cup yellow moong dal
1/2 cup freshly grated coconut
3/4th cup  sugar
2 tsp sliced almond/ pistachios (optional) 
salt to taste
oil for deep frying
ghee- 1 tsp


Method
Soak the moong dal in water for 2-3 hours, drain, clean it and blend in a mixer into a paste(the paste should not b that much fine).






Take a deep Pan, add 1 cup of water and bring to boil. Add the sugar, let it boil for 2-3 min. Then add grated coconut, cardamom powder, sliced almonds(Optional) , and  pinch salt and mix well.  stir it continuously for 5-10 min.











 Then add the moong dal paste, mix well for another 5 min  till the mixture becomes thick. 



Note: Keep stirring the moong daal continuously else it may form lumps






Take a tray.. grease the tray with ghee .




Spread the cooked  mixture and press it evenly all over  and keep aside for 25-30mins to cool.


 
With a greased knife cut it into equal size cubes or squares or to whatever shape you like.





Heat the oil in a kadhai and deep fry the pieces till golden brown.






Serve them warm or cool as you like it.
