Lemon Poppy Seed Pancakes

I like this pancake recipe very much, Whether it's breakfast for the family or dinner for friends, pancakes are always a hit. For variety, I added lemon zest & poppy seeds for a special treat..This recipe will replace all other basic pancake recipes as the ultimate in homemade taste and texture.



Ingredients:
2 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
2 Tablespoons sugar/ 2tblsp honey
1-3/4 cup milk
2 eggs, beaten
2 Tablespoons melted butter
1 teaspoon finely grated lemon zest
 2 teaspoons poppy seeds
 Method:
 In a medium mixing bowl, sift flour, baking powder, salt,  sugar ,  lemon zest and 2 teaspoons poppy seeds & mix well. A blender works fine for this step.
In a separate bowl, blend milk and eggs together. Add the melted butter. Mix well.
Whisk liquid into dry ingredients, just till combined.
Heat a griddle or frying pan until it is good and hot, film with grease, and drop spoonfuls of batter onto the griddle--just enough to spread to an approximately 2 1/2-inch round. When a few bubbles form on top of the pancakes, turn them over and cook briefly, no longer than 45 seconds. 




Serve hot with strawberry syrup and whipped cream.....


in oven:


heat griddle to 400 degree F. gease the baking tray with oil. pour the batter into desired shape to the baking tray. bake for 1-1 1/2 minutes on each side.
