Pumpkin curry south style

Recently I went to my friend Jeena’s home who is also staying in US in the same appartment. She is from Kerla. One thing I have to tell about her that she is an awesome cook. One day during lunch time we both had our lunch together & she has made this pumpkin curry..It was awesome & finger licking dish which i never  had before. God! i just loved that..I can surely say that it is one of her best recipes.
I came home & i also made that recipe. It came out well & my husband liked it. Basically it is a kerla recipe ..So I just want to share this recipe with you all..


Ingredients:
 Yellow Pumpkin or Butter nut squash - 2 cups cut in cubes
Black channa dal cooked- ½ cup
Grated coconut - 2 tbsp
Garlic- 2 cloves
Cumin  seeds roasted - 1 tsp
dry roasted red chillies - 4-5
Turmeric powder - 1/4 tsp
For tempering:
Mustard seeds - 1 tsp
Urad dal - 1/4 tsp
Curry leaves- a handful
Grated coconut - 1 tbsp
Dry red chillies - 1-2
Refined/ Coconut oil - 2 tsp
Hing- a pinch

Method:
Boil the pumpkin with salt and turmeric powder until soft., mix cooked black channa dal. Mix well &  Keep aside.
Grind coconut, chillies, garlic cloves, cumin seeds with little water  & make a fine paste.
Add this to the cooked pumpkin and cook on low flame for 8-10 mins.
Heat oil in a pan add mustard seeds, hing, urad dal, dry red chillies and curry leaves. Fry until the curry leaves turn transparent. Pour  the tempting over the cooked pumpkin curry.
Now heat  a pan. Add coconut and roast  till it turns crispy and golden brown. Mix this into the curry...
Serve hot with rice or roti..
